With the rising cost of rice, you may want to switch your staple food to potatoes. Here are some interesting nutritional facts:
  1. Potato consists of about 80% water and 20 % starch.
  2. Like rice, the carbohydrates of potatoes in the form of starch are your body's primary source of fuel for energy.
  3. There is a small amount of protein inside a potato and it is one of the best to be found in vegetables.
  4. A potato contains important vitamins and minerals: Vitamins C, potassium, vitamin B6, trace amounts of thiamin, riboflavin, folate, niacin, magnesium, phosphorus, iron, and zinc.
  5. The fibre content of a potato is almost the same as many whole-grain pieces of bread, pasta and cereals.
  6. The majority of the nutrients are found in the potato itself and not in the skin.
  7. A medium-sized potato has only about 110 calories. It is fat-free and cholesterol-free.
By the way, 2008 is the United Nations International Year of the Potato.
